Spicy Carrots Tzimmes (traditional Rosh Hashanah dish) Serves 4

2 cups organic carrots, sliced

¼ cup olive oil

2 Tbsp. minced garlic

1 tsp. cumin

1 red chili pepper, seeded and chopped

Juice of 1 lemon

2 Tbsp. maple syrup

1 tsp. cinnamon

1 Tbsp. fresh mint

¼ cup cilantro

¼ cup scallions (green onions), thinly sliced

Veggie or sea salt to taste

Directions

1. Place carrots in 2–4 cups cold, salted water and bring to a boil. Boil until fork-tender. (Be careful not to overcook; they should be firm but tender.) Drain and set aside.

2. In a saucepan over high heat, heat oil. Add garlic, cumin, chili pepper, and lemon juice.

3. Add carrots and maple syrup to saucepan and sprinkle with cinnamon, stirring constantly until the liquid evaporates.

4. Remove from heat, and carefully place into serving dish. Sprinkle with mint, cilantro, scallions, and salt.
